CHROMIUM (Blanco)
Appearance: Clear as molten glass in the bottle.It is a beautiful thing. On swirling it leaves a very light coating on the glass which belies its viscosity sitting in the glass it looks like a small puddle of sap or nectar. Quite a striking contrast to most clear spirits such as vodka.
First Impression: Incredibly smoky, sweet, some savory, lime, pineapple, at first then a sort of mineral salts at the end. It reminds me of some of those salt and herb mixtures you find in Provence or further south in France.
Taste: Smoky enough to qualify for a Barbeque Sauce! (I mean that in an admiring way) Single malt scotch afficicanados would love this stuff. Very earthy and savory notes and a lime citrus with salt develops very quickly but smoke is sweeter than the phenols you get from a Islay Scotch. A bit leaner than the Scorpion Silver or Embajador Silver with a drier finish. Amazing stuff!
Drinks: Despite our best efforts I found only one mezcal cocktail (in Gary and Mardee Regans New Classic Cocktails) I think however that there are some definite possibilities for substituting this for scotch in some cocktails to create a whole new family of cocktails-please see our recipes section for some of our ideas.
Cigars: A nice full-bodied cigar.
Final Thoughts: More subtle and complex than the Joven - a challenge to drink. This one will put hair on your chest. A downside is it is not as striking in the flavors more subtle yes, but does not have the full on smokiness (which depending on your taste is a plus or minus).
REPOSADO
Appearance: Color of Hoppes gun oil, molten glass in the bottle - It is a beautiful thing. On swirling, it leaves a very light coating on the glass which belies its viscosity sitting in the glass again it reminds me more of a very light oil than a alcohol which is a testament to its quality. Quite a striking contrast to most clear spirits such as vodka.
First Impression: Smoke is tempered by wood notes, although a deep inhalation yields a terpene type smell - smoky, phenolic, some savory and lime.
Taste: Smoky, phenolic, seaweed. Single malt scotch afficicanados would love this stuff. Very earthy and salty- woody notes at first, then intense mineral salts at the end. Reminds me kind of like a strong Islay whiskey. A great mezcal- one that you will either love or hate- there is no middle ground on this one.
Cigars: Big oily ones, use it to cut the nicotine.
